My Mom's Stir-fried Chicken

Badrul's here! And how is everyone doing? So, I just got back from my English Preparatory Program from UniRAZAK. Since my partner has done writing about her favorite dishes, I think that I need to write an entry about mine too, right?

Without further a due, here it is! Introduce you, My Mom's Stir-fried Chicken. Only God knows how much I love this dish. I had been longing for it for two months before I finally have it again after coming back from the two-months program. Actually, I don't know the real name of this dish in English as I just directly translated it from Malay word 'Ayam Tumis', at least that's how I call it.
Firstly, this dish is so special as it is prepared by my mom (obviously though). I have grown with this dish as my mom always cook this dishes almost everyday. Still, this same dish never makes me bored. It is something you will not find in any other restaurant. No one can challenge her skills when it comes to this stir-fried chicken. So scrumptiously delicious.
Simple and easy, yet delicious. That's how I can explain this dish to you. I have suffered a lot for two months before because i could not find any dish that even close to it. Usually, we eat this dish with white rice, but sometimes I eat it with bread.
Normally, people tend to keep the recipe of their delicious dishes, but I don't feel like hiding it as I know that nobody can challenge the taste of my mom's stir-fried chicken. So, here you go;
Ingredients:
- Onions
- Garlic
- Chili pepper
- Dried Chili
- Seasoning
- Chicken
Steps:
- Blend together onions and garlic, but separately blend chili peppers and dried chilis.
- Fry the chicken and put them aside.
- On a new pan, pour cooking oil and heat the pan with normal heating.
- Pour blended chili peppers and dried chili.
- Stir them until it half crisp.
- Pour blended onions and garlic.
- Stir them until it mildly crisp.
- Pour a cup of plain water and stir until it fairly crisp.
- Pour another cup of plain water.
- Put the seasoning and stir them until it nearly crisp.
- Lastly, put fried chickens and stir them together.
That's all. Easy right? I can't provide you the exact amount of the ingredients as my mom herself don't have her fixed amount of ingredients every time she cooks the dish. However, the taste will always be the same even though she don't have enough ingredients. Sometimes, she replaced the fried chicken with fried fish, just like what my family had in 'iftar' this evening. Basically, you can put almost anything into her stir-fry and still, it will taste good. In certain cases, she will put bitter bean, but it rarely happens.
Now, my sister-in-law also knows how to cook this dish as she has learned it from my mother, but she still can't challenge my mom's stir-fry. This dishes will be always in my mind because every time I am craving for it, I will remember the situation when I got back from my school. Walking in exhaustion, I went to the kitchen and find out that my mom was cooking my favorite dishes. I will remember her happy face humming some songs while cooking this dish.

Lastly, I don't whether I could survive when I will separate with her soon to further my study overseas. Most if the time, I feel uneasy realizing the fact that I won't have the chance to taste this dish too frequently soon.
